CTDA Virtual Cooking Class

About the Cooking Class

Join other RDs from around the area and learn more about the plant-based lifestyle while cooking up a scrumptious meal!

Class will be led by Synchronicity Registered Dietitian, Lauren Zimmerman.

Ingredients Needed

  • 6 cups kale (organic if possible)
  • 1/3 cup + 1 Tb pumpkin seeds
  • 1.5 cups canned pinto beans
  • 3 cups fresh basil
  • 2 garlic cloves
  • 2/3 tsp turmeric
  • 1 Tb white miso paste
  • 3 Tb nutritional yeast
  • 1 Tb lemon juice
  • 6-8 oz pasta of choice (any variety and cut; lentil, chickpea, brown rice, wheat, etc. all work)
  • 1/3 water
  • Salt & pepper (to taste)

Equipment Needed

  • Food processor or blender
  • Large pot to boil water for pasta
  • Colander
  • Large skillet or saucepan
  • Knife and cutting board to chop kale
  • Can opener
  • Spatula
