  • 4-5 Carrots or parsnips
  • Purple Top Turnip
  • 1 lb Brussels sprouts
  • 1 small cauliflower
  • 1 Package vertical roots lettuce
  • 1 cucumber
  • 3 shallot’s
  • 1 bunch flat leaf parsley
  • 3 Lemons
  • Olive oil
  • Hazelnuts if using
  • Chia Seeds if using
  • Flax seeds if using
  • Dijon mustard or your favorite
  • Capers
  • Hot or sweet paprika
  • Kosher Salt
  • Fresh Ground Black pepper
  • Chili flakes
  • 1 Whole Chicken, or Combination of Chicken Breasts & thighs

Vegetarian Note: Purchase 2-3 cauliflower if you would like to remove the meat from the recipe. Chef Michael will demo how to make a cauliflower steak. You can add other veggies to the recipe. Beets, fennel, celery root, anything that is firm will work.

  • 1 Small sheet tray
  • Parchment paper
  • Large , med, small Mixing bowl
