  • 1 red onion
  • 1/2 cup apple cider vinegar
  • 1 tbs raw sugar, coconut sugar, or pure maple syrup
  • ½ cup raw cashews
  • 2 russet (2cups peeled and chopped) potatoes
  • 2 large orange carrots
  • 1 cup nutritional yeast
  • 1 large yellow onion
  • 5 garlic cloves
  • 1 ½ tsp salt
  • 3 Tb pure maple syrup
  • 1 tsp paprika
  • 1 cup tahini
  • 3 Tbs Olive oil
  • 2 lemons, juiced
  • 2 large, sweet potatoes (purple, orange, or Japanese). Alternatives include cubed butternut squash, acorn squash, red potatoes.
  • 2 bags chopped broccoli
  • 2 cans chickpeas
  • Optional spices: onion powder, garlic powder, black pepper to taste
Other ingredients to have on hand to easily assemble meals utilizing prepped food and sauces:

Kale Caesar Salad

  • 1 bundle of kale and/or 1 head of romaine
  • Optional: if you would like to make a Caesar Wrap, purchase 1 pack of wraps (sprouted grain or Siete brand)

Mac n “Cheese” Pasta

  • 1 box of favorite pasta (whole wheat, brown rice, chickpea, or lentil)

Roasted Veggie Bowl

  • No additional ingredients needed

Tex Mex Bowl

  • Mixed greens, romaine, or butter lettuce
  • Rice (brown, jasmine, basmati)
  • Black Beans
  • Avocado
  • Tomato
  • Cilantro

Equipment Needed

  • Large blender capable of blending warm ingredients
  • Blender for making a dressing
  • Measuring cups and spoons
  • 2 large sheet pans
  • 2 pieces of parchment paper
  • Cutting board
  • Chef’s knife
  • Mixing spoon x 2
  • Spatula
  • 2, 16 oz storage containers
  • 4-5, 32 oz storage containers
